Really whatever's in your fridge + tortillas + hot sauce will crush a lazy sunday brunch.

Ingredients
1 cup of fresh mushrooms, chopped (optional)
1/2 cup bell peppers, finely diced
1/2 cup onion, finely diced
4 eggs
6 small (taco) flour tortillas (or corn)
1/2 cup shredded mexican cheese
4 strips cooked crispy turkey or regular bacon and/or 1/2 lb breakfast sausage (optional)
cooking oil
salt and pepper to taste
chili powder
1 clove minced garlic
for serving, all optional:
salsa (like kirkland organic medium salsa)
hot sauce (like siete jalapeno or trader joes jalapeno hot sauce)
chopped fresh avocado
chopped cilantro
lime wedge
Directions
if making sausage or bacon, cook by package directions in a small saucepan. remove from pan, chop and set aside.
heat a small saucepan with 1tbspn oil on medium high heat add garlic until fragrant (30a), saute mushrooms onions and bell peppers until browned, about 3 minutes. set aside
wipe saute pan with a wet paper towel and return to medium-high heat with 1tspn oil.
beat four eggs in a bowl, add salt and pepper to taste and a dash (1/8 tspn) of chili powder.
add egg to pan and let cook for 30s. then fold over to scramble and mix in prepared veggies and meats. cook another 30s or until fully cooked, then set side.
add cheese to warm egg mixture and fold in so it melts
heat tortillas in microwave or: wipe pan again, heat on medium. spray pan with cooking spray (or a thin layer of oil) and add a tortilla. warm 20s per side until warm and fluffy, slightly brown on each side. repeat for all tortillas
plate: spoon 1/6 of the mixture into the tortilla, top with a tbspn of salsa and a couple dashes of hot sauce. top with chopped avocado, cilantro, freshly squeezed lime juice (optional)
optionally wrap in aluminum foil and serve
