Nix's Dhaba Egg Curry

Spicy roadside egg curry.

Ingredients
Phorun (optional):
1 small bay leaf
½ inch cinnamon
2 green cardamom
½ teaspoon cumin seeds
2 cloves
Masala Spices:
1/2 tsp red chili powder (adjust to taste)
1/4 teaspoon turmeric
1/2 teaspoon garam masala
1 tsp coriander powder
1 teaspoon salt (adjust to taste)
1/2 tsp sugar
Ingredients:
10-12 boiled eggs
2 tablespoons oil / ghee
1¼ cups onions fine chopped or 2 medium onions diced, boiled & pureed
1 cup tomatoes finely chopped
1 green chilli chopped
1 tbspn minced garlic
1/2 tsp ginger paste
1 to 1 ¼ cup water (adjust slightly as needed)
Garnish:
1 tablespoons coriander leaves chopped finely
¼ teaspoon Kasuri methi (dried fenugreek leaves, optional)
4 tablespoons cream or 10 cashews blended with ½ cup water (optional)
Directions
Boil eggs: cover eggs in a large pot with ~2inches of cold water (optionally add 1tspn salt and 1tspn vinegar), bring to a rolling boil. When boiling, turn off heat, keep on burner, cover, and let sit for 12 minutes. After 12 minutes, put eggs in ice bath to stop cooking and peel, wiping dry and leaving time for them to air dry a bit. Stab each egg with fork 4 times to prevent from bursting while frying.
Fry boiled eggs: in a medium skillet, heat enough oil to coat the surface to shallow fry the eggs. Add in all eggs and rotate them regularly to ensure they're lightly browned and crisped on as many sides as you can. set aside.
Make base: heat oil/ghee over medium skillet. add phorun (if using), fry for 30s until fragrant. Add onions and cook 5min until soft/translucent. Add garlic/ginger, fry another few minutes. Add tomatoes and cook ~5 minutes covered until liquid starts to come from tomatoes. Add all masala spices, cook a few minutes until integrated and fragrant. Taste, add salt/sugar as needed.
Make gravy: Optionally remove whole spice pieces and blend this mixture to get a soft gravy and return to pan. Add 1-2 cups of water, depending on the consistency you want, and heat to thicken to desired thickness, around 2-4 minutes.
Add eggs: Add eggs to gravy, heat on low heat for 2-4 minutes to incorporate flavor, ladling gravy on top of eggs. Add methi/cream and other garnishes if using.
