Pad Ka Prow (Thai basil Chicken) (Chef Maam)

Classic street meal complete with the runny fried egg.


Ingredients

  • 6 cloves garlic, minced

  • 3-5 Thai chilis, finely diced

  • 1/2 white onion , sliced

  • 1 cup zucchini, carrot and or any good stir fry veggies , cut into 1 inch strips, can use crinkle cut knife to cut slices and then cut those into 3 strips per slice

  • 2 chicken breasts, very finely diced (like ground chicken)

  • 1 cup Thai basil leaves, packed

  • 1-2 eggs to fry and serve on top (optional)

Sauce

  • 4 tablespoons sweet soy sauce

  • 2 tablespoon oyster sauce

  • 3 tablespoons fish sauce


Directions

  1. Heat wok until smoking, then add 2tbpsn oil

  2. Add chicken and cook for one minute

  3. Add 1/2 sauce and garlic and Thai chili s (before chicken is cooked)

  4. Cook for a minute, then add rest of sauce and veggies add optionally a splash of water

  5. After 4 minutes, when chicken is cooked, turn off heat

  6. Fold in Thai basil leaves

  7. For egg: add 5tbspn oil, heat oil and add egg, and keep spooning hot oil on top to keep hot. Once crispy on outside (30s), build plate: rice, stir fry, egg
