Nix's Halal Cart Chicken & Rice

Components
Chicken, marinate 1-4 hrs:
2 pounds boneless, skinless chicken thighs, trimmed of excess fat (6 to 8 thighs)
2 tablespoon vegetable or canola oil
Any mediterranean spice mix or: 2 tablespoons lemon juice, 1 tablespoon chopped oregano (fresh/dried), 1/2 tspn coriander, 3 garlic cloves, salt/pepper
Rice, cook in rice cooker:
2 tablespoons unsalted butter or ghee
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
1 1/2 cups long-grain or Basmati rice
2 1/2 cups chicken broth
Kosher salt and freshly ground black pepper to taste
White sauce, mix and refrigerate:
1/2 cup generic brand miracle whip OR low fat mayo
1/2 cup Greek yogurt, thick (like fage brand)
1tspn sugar (or less)
2 tablespoons white vinegar
1 teaspoon lemon juice (can omit if using miracle whip)
1/4 cup chopped fresh parsley
Kosher salt and freshly ground black pepper
1 tsp dry mustard powder (optional)
3/4 tsp garlic powder (optional)
1/4 tsp paprika (optional)
Red sauce:
source premade from Halal Guys OR harissa sauce
For serving:
Iceberg/Romaine lettuce, roughly chopped
Tomatoes, wedges
Pita bread, quartered and warmed
Directions
Grill marinated chicken on cast iron pan. After half cooked, remove from pan, chop coarsely and return to pan to ensure all sides are charred and just cooked through (165°F)
Combine all ingredients, serve.
