May Kaidee Chili Paste (Vegan)

This vegan base will finish a delicious soup or a curry.

Ingredients
1/2 cup vegetable oil
1 cup chopped carrots
1 cup coarsely chopped onions
1 tbspn minced garlic
1 cup dried red chili peppers (or 2 tbspn dried chili powder)
2 tbsp Healthy Boy Brand light soy sauce
2 tbsp Healthy Boy Brand mushroom soy sauce
2 tbsp lemon juice
1 tbsp brown sugar
Directions
Using a food processor, puree peppers and onion. Strain this mixture to remove excess moisture.
Mix 1 cup mayo and 4 teaspoons of the vegetable purée in a bowl.
Add remaining ingredients and mix well.
Chill for several hours to blend flavors.
