May Kaidee Chili Paste (Vegan)

This vegan base will finish a delicious soup or a curry.


Ingredients

  • 1/2 cup vegetable oil

  • 1 cup chopped carrots

  • 1 cup coarsely chopped onions

  • 1 tbspn minced garlic

  • 1 cup dried red chili peppers (or 2 tbspn dried chili powder)

  • 2 tbsp Healthy Boy Brand light soy sauce

  • 2 tbsp Healthy Boy Brand mushroom soy sauce

  • 2 tbsp lemon juice

  • 1 tbsp brown sugar

Directions

  1. Using a food processor, puree peppers and onion. Strain this mixture to remove excess moisture.

  2. Mix 1 cup mayo and 4 teaspoons of the vegetable purée in a bowl.

  3. Add remaining ingredients and mix well.

  4. Chill for several hours to blend flavors.
