InstantPot Buffalo Chicken Wrap

Healthy, simple one pot, pulled buffalo chicken meal - ain't wings but it sure is close.


Ingredients

  • 2 chicken breasts

  • 1 tablespoons unsalted butter

  • 4-6oz Frank's RedHot Buffalo Wing Sauce

  • 1 tablespoons honey

  • 1 teaspoons cider vinegar or red wine vinegar

  • 2 tablespoons Tabasco Sauce or 1/2 to 1 tspn chili powder or other flavors (optional)

  • 1 tbspn minced garlic (optional)

  • 1/2 sliced white onion (optional)

For Wrap:

  • Romaine lettuce leaves (however much you want, ~4-8 wraps)

  • Can of sweet corn (or chiptole corn salsa)

  • Brown rice or any rice/quinoa (optional)

  • Fat Free Ranch, Blue Cheese, Salsa or any other topping (optional)


Directions

  1. Optional: Add butter and heat on saute mode, add garlic and saute 30s until fragrant, add onions and saute, stirring, 5m until soft and browned

  2. Add all other the ingredients in Instant Pot.

  3. Cook on manual high pressure for 10 minutes.

  4. Natural release.

  5. Shred chicken in Instant pot with two forks.

  6. The chicken should absorb most of the sauce.

  7. Put on sauté setting until juice is fully absorbed in shredded chicken. Should take about 5 minutes. Remove chicken from Instant Pot.

  8. Let it rest about 3 to 5 minutes

  9. Build Wrap : Lettuce, rice, chicken, corn, salsa, any other toppings
