Healthy Turkey Breakfast Sausage

Healthy turkey breakfast sausage that tastes store-bought but you know exactly what's in it!

Prep time: 10m, Total start-to-eat time: 20min

 

Ingredients

2 pounds ground turkey

1 tablespoon brown sugar

2 teaspoons kosher salt

1 1/2 teaspoons ground black pepper

1 1/2 teaspoons ground sage

1 1/2 teaspoons ground thyme

1/2 teaspoon dried marjoram

1/2 teaspoon red pepper flakes

1/2 teaspoon paprika


olive oil (for cooking)

maple syrup (for serving)

 

Directions

  1. Mix turkey, brown sugar, salt, black pepper, sage, thyme, marjoram, and red pepper flakes in a bowl. Shape turkey mixture into 1inch diameter balls (around 1/8 cup) - it's ok if they're sticky

  2. Heat a non-stick large skillet over medium high heat. add a spray of olive oil (or oil of preference) and drop each ball 2 inches apart (you'll be flattening them down).

  3. Let cook for 30s-1min, until bottom browns, then using a nonstick spatula, flip over and press down on the cooked side until the patty becomes a flat patty (around 3 inches in diameter). Keep making more patties until pan is filled - it's fine to crowd them, remember they'll reduce in size as cooked.

  4. Keep cooking until longer pink in center (~6-8 minutes), ideally using a meat thermometer and taking each patty out when it hits exactly 165 degrees F. Lay out on a plate to cool and either serve immediately with maple syrup or plain, or freeze to reheat later in freezer bags.
