CPK Copycat: Thai Chicken Pizza

My favorite pizza at CPK, now at home.

Ingredients


Spicy Peanut Sauce:

1/2 cup peanut butter

1/4 cup hoisin sauce

1 tablespoon honey

2 teaspoons rice wine vinegar

1/2 teaspoon ground ginger

2 tablespoons sesame oil

1/4 teaspoon dried red pepper flakes

1 tablespoon oyster sauce

4 tablespoons water


Pizza:

1 tablespoon olive oil

2 chicken breasts cut into 3/4-inch cubes

1 pound pizza dough (storebought is fine, or use the nomplate recipe)

cornmeal

2 cups shredded mozzarella cheese or 8-12oz fresh mozzarella

4 green onions, slivered diagonally

1/2 cup bean sprouts (optional)

1/2 cup sliced red onions (or white or both)

1/3 cup shredded carrot

2 tablespoons chopped roasted peanuts

2 tablespoons chopped fresh cilantro





Directions

  1. Place a pizza stone in the oven and preheat to 500 degrees (or as high as your oven will go). Let the stone pre-heat in oven and make sure oven is super hot (make sure you have good ventilation)

  2. To make Peanut Sauce, combine all sauce ingredients in a small saucepan and bring to a boil. Boil gently for 1 minute. Remove from heat and set aside.

  3. Heat olive oil in a nonstick pan and cook chicken until no longer pink, about 5 minutes - or can reuse cooked shredded chicken. Place chicken in a bowl and toss with half of the peanut sauce.

  4. Coat a pizza peel, pizza pan or large plate with a sheet of parchment paper and sprinkle with cornmeal.

  5. Divide dough in half and shape each into a 9-inch round on the parchment paper . Many ways to do this - you can start rolling it out with a floured rolling pin and then toss (watch this video) - whatever you do, make sure it's super thin (patch up any holes). If the dough springs back and doesn't hold shape, wait a few minutes and try again.

  6. Prepare the pizza: Spread 1/4 cup of sauce evenly on dough. Cover sauce with 3/4 cup mozzarella cheese (hand tear if not pre-shredded).

  7. Place half the chicken on top of the cheese followed by half the green onions, carrots, onions and bean sprouts.

  8. Top with 1/4 cup mozzarella and half of the peanuts.

  9. Transfer pizza to pizza stone and bake 8 to 10 minutes, until crust is golden.

  10. Sprinkle with cilantro and serve. Repeat for second pizza (if you've got room left!)
