Cali Chicken Avocado Burger with Jalapeno Slaw

Juicy, California-style chicken burger - healthy and satisfying.

Ingredients

Burger Patty:

1 pound ground chicken (92% for more flavor)

1 large ripe avocado - cut into chunks

1 clove chopped of garlic

1/3 cup Panko crumbs

1/2 teaspoon kosher salt

1/4 teaspoon fresh black pepper


Burger Patty, optional:

1 lime, juiced

1 minced Poblano or Jalapeño

2 tbsp grated red onion

1/2 tsp cayenne pepper or hot sauce


For Slaw:

1 cup packaged slaw, like broccoli slaw from Trader Joe's (or chopped cabbage, onions, carrots)

1-2 tbspn yogurt dressing or mayo, to taste

1/4 cup chopped fresh or bottled jalapeños


For Assembly:

burger buns

pepper jack or cheese of choice

toppings / condiments of choice





Directions

1. Combine all burger ingredients except avocado in a bowl. Gently fold in avocado and form into 5-6 patties

2. Preheat grill or cast iron skillet over medium heat. Spray with oil and grill patties until cooked through (165 degrees in center), about 6 minutes. Add cheese during last 2 minutes. Cover grill if meat is not cooked through and burning on bottom

3. Toast buns on grill or toaster.

4. Assemble: bottom bun, optional sauce, chicken with cheese on top, slaw, optional condiments
