Chipotle Steak or Chicken Bowl

Put your favorite meat, salsa and toppings together in this healthy classic.


Ingredients

  • 1lb Grilled Mexican Chicken or Steak

  • 1 cup Chipotle corn salsa OR 1 can sweet salted corn

  • 2 cups Brown or White rice, cooked according to package directions

  • 1 can drained and rinsed black beans

  • 1 green or red bell pepper

  • 1 medium yellow onion

  • 1 cup Romaine or any lettuce, chopped

  • 2 Large Burrito tortillas (if not making a bowl)

  • 2 tbspn oil

Optional (if going all out)

  • minced garlic clove (optional)

  • salt to taste

  • cumin (optional)

  • 1 tbsp chopped cilantro (optional)

  • 1 tspn lime juice or zest (optional

  • 1 tspn chili powder pepper (optional)

Toppings (all optional)

  • 1/2 cup Guacamole

  • 1/2 cup sour cream

  • 1 cup shredded mexican or monterey jack cheese

  • 1/2 cup salsa (whatever you like)


Directions

  • Rice: can serve plain or top with 1 tbsp chopped cilantro and 1 teaspoon lime zest or juice

  • Black Beans: serve plain or heat beans in a small saucepan on medium heat and season with 1 tspn minced garlic, 1 tspn cumin, 1/2 tspn chili powder until heated through

  • Fajita Veggies: Heat 1 tbsp oil on a medium skillet on high heat and add 1 tbsp minced garlic, saute 30s until fragrant. add sliced bell pepper and onion and a pinch of salt to skillet. saute 3-5 minutes until starts to blacken but is still crisp


  • Assemble Bowl: In a bowl, add a scoop of rice, and top with a scoop of beans. Add grilled meat. Top as desired with the Fajita Vegetables, Corn Salsa, Guacamole, Cheese, Sour Cream, Salsa and whatever other toppings your heart desires.

  • Assemble Burrito: Same as above but assemble in a large burrito tortilla and roll. Watch this video to be a rolling pro.
