Chipotle Corn Salsa

Top your favorite Chipotle bowl, salad or just munch it.

Ingredients
1 can of sweet, preferably unsalted corn
2 jalapeno peppers
1/2 red onion, diced
1/3 cup cilantro, chopped
1 Tbsp lime juice
salt and pepper to taste
1 tspn oil
1/2 chopped fresh avocado (optional)
2 poblano chilies or chilis from adobo sauce can- careful, these can be spicy! (optional)
Directions
Heat oil in medium skillet on medium heat
Add corn, chilis and jalapeño peppers
Roast for 3 minutes, until brown-ish
Add all other ingredients, mix and season with salt to taste
